Lekue’s Minute Cake Pan is great for that one serving of desert; their recipes easy and elegant.
But once these little guys are in your kitchen you’ll find other uses. I carry one around with me in the morning grabbing bites of my morning muesli and fruit while getting ready for a busy day at Inner Oasis.
Great for small left-overs. Just cover with a 4 inch silicone lid from Charles Viancin and it’s sealed and waiting for you when it’s needed.

Vegetable Omelette 1/4 Cup green peppers diced 1/4 Cup red onion diced 2 eggs 1/2 clove garlic finely minced 2 tbsp milk extra virgin olive oil salt and pepper to taste
Lightly oil inside of omelette maker. Place vegetables and garlic in bottom of omelette maker and cook 1 minute – or until just tender (800 watts)
Whisk the eggs in separate dish, add milk, salt and pepper. Pour into omelette maker, close lid (note there is a top and bottom to the omelette maker). Cook 1 minute and 45 seconds at 800 watts. Open omelette maker and flip omelette. Cook another 1 minute and 45 seconds (800 watts). Remove from omelette maker and serve.
NOTES: Omelette will slide out of the maker with no mess. Substitute other vegetables as you wish: broccoli, mushrooms, etc. Do not use more than 2 eggs.

The recipe Lekue provides is simple and easy to follow, but Claire likes more flavor. Her solution: adding dry herbs (chives, cracked pepper, perhaps a touch of oregano,) to the hot milk before you add your choice of lemon, vinegar or yogurt). The heat helps to assure the herbal flavors are released and evenly distributed through your cheese.
